Here we have some white cabbage sauerkraut.  Once again, kraut is one of the easiest ways to show off your fermentation skills.  The following day, I had to add a little bit of water to top off the jar, as you want all of the cabbage to be submerged.  Once the cabbage ferments for the desired number of days, simply remove the layer of cabbage leaves as you see in the photos; top it with a lid; and pop in the fridge.  Definitely a nutritious and economical way to keep your intestinal health in top order.
