Protein is the basic structural material of all tissue cells. It literally controls every biochemical reaction that occurs within our bodies. Protein is simply a collection of 20 amino acids, of which 9 are essential (strictly coming from foods) and 11 are nonessential (can be synthesized from other amino acids).
Why is protein so important to fitness? 65% of the body's protein is located in skeletal muscle. Furthermore, protein is the only nutrient responsible for building new muscle tissue. Paleo or "primal" man made protein a staple food, and we must do the same.
Common sources of protein are animal meat, dairy products, eggs, nuts, soy products, grains, and beans.
Protein has a biological value (BV), which measures the absorption or "usability" by the body in protein synthesis. And, not all proteins are created equal. More to come on these protein sources and the benefits they bring.
